The following is a great book that I'd also recommend:
The Science Behind Tapping: A Proven Stress Management Technique for the Mind and Body
By Dr. Peta Stapleton
Published April, 2019
Dr. Peta Stapleton is a clinical & health psychologist, world leading researcher, author & educator.
In her book, she not only breaks down EFT research in very simple and palatable ways in areas such as trauma, PTSD, stress, anxiety, depression, food cravings, and weight loss, she also explains how EFT actually works in the body.
You can read more about the book here & also learn where you can purchase it if you live outside of the United States.

Lastly, if you're looking for a comprehensive research paper, here's a good one by Dr. David Feinstein:
From the abstract:
"This paper focuses on the 245 clinical trials, meta-analyses, systematic evaluations, and theory pieces examining energy psychology protocols that include tapping on acupuncture points (acupoints), the most frequently used and investigated intervention in energy psychology" (Feinstein, 2021, p.17).
His research further supports the efficacy of acupoint tapping protocols.
